Ice Cream Making Risk Assessment

Ice Cream Maker Photograhs

The Ice Cream Machine is a scraped surface cooling heat exchanger.

Ice cream mixture is fed to the cooling chamber via a hopper, located on the top of the machine. Inside the cooling chamber a rotating beater fitted with scrapers is located. The outside surfaces of the chamber are fitted with refrigerator coils, which cool the chamber and the heat extracted is conveyed away from the machine in the form of heated water.

Ensure the machine is set up in a cool place as far as possible from any source of heat and away from any walls that may obstruct the air circulation.

Manual Timer
Times from 0 to 30 minutes
When the timer is on it starts the refrigeration compressor
When the timer goes off it switches off the compressor and the alarm bell rings

Freezer Time and Mix Quantity

Loading
Minimum 1.5 litres of mix
Maximum 2 litres of mix
Ideal 1.7 litres mix

Freezing Time

From 8 to 10 minutes

This freezing time is only indicative and may change according to the mix used
A mix on water basis (fruit) can freeze in 7 to 8 minutes, while a mix with sugar and alcohol will take 10 to 12 minutes

Operating the Machine

Pour the mixture into the machine through the funnel on the top of the machine
Adjust the freezing time by turning the knob of the manual timer
Push the freezing button
When the timer reaches "0" a bell sounds indicating that the ice cream is ready and may be extracted

To extract the ice cream place a basin on the shelf, open the outlet tap on the flange by turning the outlet pin counter clockwise

When all the ice cream is out of the machine, push the dasher button and the freezing button to stop the freezing process. This is done even if the freezing stops automatically when the timer reaches "0"

If the ice cream is not quite hard enough when the timer has reached "0", put the timer back on for another 2 to 3 minutes.

CLEANING
